On www.choosemyplate.gov, the USDA reports that “about half of all American adults have one or more chronic diseases, often related to poor diet. Everything that we eat and drink - the food and beverage choices we make day to day and over our lifetime - matters.” The current recommendation in the USDA’s 2015-2020 Dietary Guidelines is to fill our plates half full with fruits and vegetables at each meal. For elementary age children that means eating 2 to 2-1/2 cups of vegetables and 1-1/2 cups of fruit every day. Healthy eating habits are developed over a lifetime, but Travis contributes to this journey by taking part in The VegOut! Challenge. You can read more about the challenge HERE.

Mint "Milk" Shake
- Fresh mint leaves or mint extract
- Almond milk (or any “milk” product such as coconut milk or soy milk)
Put avocado and mint into blender with just a splash of milk. Pulse together thoroughly. Add more milk to thin out to your likening. Can drink as a shake or freeze for ice cream.
Veg Out Tacos
- Taco seasoning
- Tortillas or taco shells
- VegOut! toppings (lettuce, tomatoes, onion, jalapenos, avocado, cilantro, etc.)
Place mushrooms of your choice in a food processor and pulse until it resembles ground meat. Then sauté in pan with taco seasoning mix. Put “meat” mixture into tortilla or taco shell. Add VegOut! toppings of your choice.
